Shrimp Biryani

Dozens of variants of biryani can be found throughout India. Biryani is a form of fried rice which can be taken in many different directions.  The most traditional form is made with lamb but offered here is a version with shrimp.

Ingredients:

   
1 pound raw shrimp, shelled and deveined
1 cup basmati rice
1 medium yellow onion, finely chopped
1/8 cup grated ginger
2 cloves garlic, crushed
2 green chilies, whatever you have
2/3 cup coconut, grated
2 teaspoons garam masala
1 tablespoon lime juice
1 tablespoon cashews
1 tablespoon raisins
2 bay leaves
1/4 cup ghee
1 teaspoon salt

 Procedure:

  1. Soak the rice in room temperature water for 20 minutes and drain
  2. Grind the chilies, garam masala, ginger, garlic, cashew nuts & coconut into a paste using a mortar and pestle or blender
  3. In a sauce pan heat 3 tablespoons of ghee and add half of the onion, sauté until the onions are translucent.  
  4. Add the paste from step 2 to the onions and stir for about 5 minutes.
  5. Place the shrimp and ½ teaspoon salt into the pot and stir well such that the shrimp are well coated. Reduce the heat to low and cook for 5 minutes Remove from heat.
  6. In a separate pan, heat 2 tablespoons of ghee and sauté the bay leaves and the remaining onions and cook until the onions are translucent.
  7. Bring the heat up to medium high, add the rice and stir fry for about 10 minutes. Add the peas, ½ teaspoon salt and 2 cups of water.
  8. Reduce the heat to low, lid the pan and simmer for 15 minutes.
  9. Preheat the oven to 300°F.
  10. In a dutch oven or serving bowl, mix the shrimp and rice together.
  11. Lid the dutch oven or cover the bowl with aluminium foil. Put it in the oven for about 10 minutes.
  12. Remove from the oven, add the lime juice, and garnish with cashews and raisins.
