Oven Fried Bacon

I mean, who doesn’t like bacon. For some, it leads to the subculture of home prepared cured and smoked meats.  For most, it is a heavenly food for which there is little substitute.  The only real problem with bacon, wheather all you need is a pound or a slice, is the mess.  The microwave oven cooks bacon but generally at the expense of mouth feel and taste.

Oven cooking bacon solves all that. Once tried, few go back to tradtional pan frying and never reach for the microwave again because fat does not render well under the microwave.

A few essential pieces of kit are necessary.  A half sheet sheet pan has so many uses most of us should have at least three or four.  The size is matched to normal sizes for foil and parchment paper.  A wire rack that fits this pan is also needed.  You’ll use these over and over for years so your investment is sound.

Your oven will stay splatter free because liquid fat is never trapped between the pan and the bacon.

Ingredients

Bacon! The more the better.

Procedure:

Preheat the oven to 400F.  Place a single layer of foil on the bottom of the sheet pan.  Insert the rack.  Place the bacon on the rack and place in the oven.  After ten minutes, rotate 180 degrees and continue to bake until done to your liking.  Remove from the oven and allow to cool.

Note - bacon fat does get under the foil - which will lead you to think you don’t need the foil and you’ll try things without it.  Don’t even think about it.  The fat will over heat and burn on to the pan if you go this route; use the foil and save yourself some grief.
