For a limited time, world renowned food author Michael Ruhlman is offering a signed limited edition of one the fundamental baking charts in his latest book, Ratio: the Simple Codes behind the Craft of Everyday Cooking. The premise of the book is that there are fundamental relationships between ingredients in a variety of classes of foods, most notably in baking. In other words, it’s not important to know how much of each ingredient to put in, but the relationship of one ingredient to another. From his book:
“We have been trained in America to believe that we can’t cook unless we have a recipe in hand. I am not saying recipes are bad or wrong-I use them all the time; there are plenty of recipes in the new book-but when we rely completely on recipes, we cooks do ourselves a grave disservice. We remain chained to the ground, we remain dependent on our chains. When you are dependent on recipes, you are a factory worker on the assembly line; when you possess ratios and basic technique, you own the company.”
Truly new concepts in cooking are rare but Ruhlman has done just this. Overwhelmed by requests, he has agreed to offer signed copies of this chart for a limited - and unknown -period of time. Authors rarely do this sort of thing. Imagine the value of this autographed chart hanging in your kitchen. Get yours now, before time runs out. I did.

Christian, That looks like a very helpful chart for people who bake. If I was in that category, I would be pulling out my credit card. Mark

What a simple, yet liberating, idea. So many people (myself included) are totally stuck without a recipe. But I can see how remembering these proportions is so much easier than trying to remember 12oz of X and 18oz of Y.
Very interesting.

This looks like a great resource. And I totally agree with Ruhlman’s observation - I can never follow a recipe, I always feel a need to change a few things and experiment. Much more fun, and very tasty.
All the best,

I like this better than your standard cookbook. This teaches us to use our creativity instead of simply following strict guidelines.
